Instructions

Zest and juice of 4 lemons

Add butter and sugar to bowl with lemons

Place bowl on simmering pan

When melted add egg mixture to bowl

Cook for further 10 minutes till curd feels heavy on whisk

Strain curd and place in jar to cool
