Instructions

Add water starter and flour to bowl

Mix briefly and autolyse for 40 mins

Mix again on slow for 5 mins

Add salt and mix on fast for 5 mins

Place in tub and rest for 35 mins

Fold and rest for a further 35 mins x 3

Bulk fermentation minimum 6 hours

Pre shape and rest 15 mins

Shape, place in banneton

Put in fridge minimum 12 hours
